2⅓ cups (350 g) cake flour
1 tbsp (15 ml) cocoa powder
1 tsp (5 ml) bicarbonate of soda
1 tsp (5 ml) baking powder
1½ cup (315 g) castor sugar
¾ cup (185 ml) Clover Danone Inkomazi
¾ cup (185 ml) vegetable oil
¼ cup (60 ml) beetroot juice
1 tbsp (15 ml) red food colouring
2 tsp (10 ml) white vinegar
2 eggs
Cream cheese icing
½ cup (120 g) butter, at room temperature
1 cup (250 ml) cream cheese, at room temperature
1 tbsp (15 ml) Clover UHT cream
1 tsp (5 ml) finely grated lime zest
2-2½ cups (240 – 300 g) icing sugar, sifted
Method
1. Preheat the oven to 180 °C.
2. Line 18 x 80 ml capacity muffin pans with paper cases.
3. Sift the flour, cocoa powder, bicarbonate of soda and baking powder into a large bowl.
4. Stir in the sugar.
5. Whisk the buttermilk, oil, beetroot juice, food colouring, vinegar and eggs in a jug until combined.
6. Make a well in the centre of the flour mixture.
7. Add the buttermilk mixture and stir until just combined.
8. Divide the mixture among the paper cases.
9. Bake for 20 to 25 minutes or until an inserted skewer comes out clean.
10. Transfer the cupcakes to a wire rack to cool completely before icing.
Cream cheese icing
1. Beat the butter until pale and fluffy.
2. Add the cream cheese, cream and lime zest and beat again.
3. Gradually add the icing sugar and beat until smooth, adding enough icing sugar to gain the desired consistency.

Settling down to start a family and buying a house are the top priorities for UK couples in 2020 getting engaged or married languishing towards the bottom of the priority list, alongside looking as good as possible on social media
Almost half of Brits proposing to their lover will get into debt to pay for their engagement ring, according to new national research* ahead of Valentine’s Day on Friday.
But, one in five of people will subsequently take between 2 – 5 years to pay off the cost of that engagement ring, according to the nationwide study by financial comparison site money.co.uk today.
More than a third of those who have been engaged regret how much they spent on an engagement ring and admit they wish they’d spent less on it. Millennials were especially regretful – with more than half saying they spent too much on their engagement ring.
Salman Haqqi, money.co.uk personal finance expert, said: “Our research shows that the average amount of debt Brits incur buying an engagement ring is around £6,300, around 2.6 times the average monthly salary – an eye watering sum if you are getting into debt to pay for it.
“Spending outside of your means, even with the most romantic intentions, can lead to future financial difficulties that you should try to avoid. When it comes to the cost, the head should always lead the heart, so make sure you budget for your new bling and don’t let the seductive sparkle impact your spending.”
Surprisingly, the younger people are when they propose, the more debt they seem to get into. Gen Z (born after 1995) are the most extravagant incurring a debt of around £7,700 for the purchase of their engagement ring, while those aged 55 and over incur a debt of around £5,100.
To help romantics plan their spending, money.co.uk has created a special engagement ring cost calculator, designed to give people an accurate indication of how much they can afford to spend on an engagement ring.
Salman Haqqi, explaining how the new calculator works, said: “It asks a few simple questions about people’s age, how long they’ve been engaged, their job, salary, and monthly outgoings to deliver users a personalised engagement ring cost in just a few minutes.
“We know that money can’t buy you love but, if you’re not careful, love can cost you far more than it needs to. Our engagement ring cost calculator can help you plan your finances properly and ensure you buy a ring that matches your personal financial situation.”
So, what should an engagement ring cost those planning to propose in 2020?
The money.co.uk statistics show that 1 in 10 Brits believe they should spend around double their monthly salary on a ring to propose to their partner.
More than half of couples will choose a classic off-the-shelf diamond engagement ring to celebrate their engagement, the survey reveals. Though 14% will have a bespoke diamond ring made especially for their engagement.
And while one in five couples will pay for their engagement ring using their credit card, around six in 10 people will save up for their engagement ring – with those aged over 55 the most likely to set aside cash pay for it.
Salman Haqqi added: “Our survey suggests that getting married, and therefore getting engaged, is actually further down the priority list for Brits in 2020 than it ever has been.
“In previous generations getting engaged and married was often first in the timeline of milestones. But, in 2020, other priorities like getting a house, travelling, socialising with friends and having the latest technology are all listed as higher priorities by most adults.
“In fact, our research shows that getting married or engaged – the top priority for just 4.8% of the population – is only marginally more important than looking great on social media or buying a large wardrobe of clothes for most British adults.”
With Britain leaving the EU a big talking point this year – almost a quarter of men admit they have actually put off proposing to their lover because of fears over the unknown effect and cost of Brexit.

During the the 3 rd Century in Rome, there was a man named Valentino. He was a young priest who married couples at a time when it was prohibited. The Roman Emperor Claudius II, a wretched ruler during this time, wanted all men to enlist and be soldiers in war- not husbands. Valentino was a tender soul and went against the Emperor’s orders officiating many Christian marriages in secrecy. When the Emperor discovered the marriages that Valentino had performed, he insisted that he renounce his Christian faith, become Pagan path and pray only to the Roman gods Jupiter and Mercury.
Love Letters, Chocolate, Flowers & Prosecco
Valentino refused and the Emperor sent him to prison. During his imprisonment, he cured a beautiful young woman who was the jailor’s daughter. They fell in love and were set to be married. This infuriated the Emperor and he ordered Valentino to be executed. But the courageous young priest continued his plight for amore and wrote a letter to the woman proclaiming his love. He signed it from your Valentino .

for Your Love
Morbido Al Cioccolato Con Confettura di Fragole ~ Chocolate Lava Cake With Strawberry Conserve
Serves 10
Ingredients
280 g (6) Eggs
220 g (1 heaped cup) Sugar
190 g (6 oz) Dark Chocolate
170 g (1 1/2 sticks) Butter
60 g (1/2 cup) ‘00’ Flour, sieved
7 g (1 tablespoon) Dark Cocoa Powder, sieved
1 teaspoon Vanilla essence
For the Strawberry Conserve
1 kg (2 lbs 4 oz) Strawberries, cleaned and cut into small pieces
150 g (3/4 cup) Sugar
3 Sprigs of Mint
Procedure
To make the strawberry conserve, place the strawberries and sugar in a thick-based frying pan and cook over a medium heat until the strawberries begin to caramelize. Take off the heat and leave to cool.
Meanwhile, in a bowl, beat the sugar with the eggs until pale and fluffy. In a double boiler, melt the chocolate with the butter. Remove from heat and allow to cool until just barely warm. Fold the melted chocolate into the egg mixture.
Adding one ingredient at a time, gently fold in the flour, cocoa powder, and vanilla to the chocolate mixture. Grease individual molds with butter & flour (a muffin tin works nicely for this as well). Pour the batter into the molds and bake in preheated oven at 200 °C (400°F) for 8 minutes.
Turn the individual cakes onto serving plates, accompany with a spoonful of strawberry conserve and garnish with a few fresh mint leaves. Serve immediately

NEW survey reveals the scents and smells with the best (and least) pulling power.
More than HALF of UK adults wear a certain perfume or aftershave because they think it has ‘pulling power’ according to a new survey.
The survey by perfumedirect.com has also revealed the fragrances Brits have voted as ones with the most sex appeal.
Men’s scents topping the list are Dior Sauvage, Creed Aventus, Paco Rabanne Invictus; Issey Miyake L’Eau d’Issey Pour Homme and Hugo Boss Bottled.
For women, wearing Chanel Coco Mademoiselle, Chloe Nomade, Flowerbomb by Viktor & Rolf, YSL Black opium and Marc Jacobs Daisy is a way to lure a lover. (Conversely, just over ten years ago the perfume voted the one with most pulling power was Chanel No. 5, which was way down the list in 2020’s poll at number 10).
“The perfume industry spends millions of pounds every year in advertising to promise us that their perfumes promise ‘sex appeal’ and ‘magnetism’,” says www.perfumedirect.com’s Jonny Webber, “so we decided to find out if this really is the case; with some surprising results.
“It seems as much as perfumes and aftershaves can ‘turn someone on’ – with more than 54% of people claiming that a good smell makes someone more attractive, 71% of people said that a person’s choice of scent put them off dating them.
“This was further backed up by the huge number of people who won’t even consider a date if their prospective partners’ perfume doesn’t make the grade. Of the respondents who had used an online dating site, 28% said that they had asked their potential date what aftershave/perfume they wore as a way to find out more about them and decided to not take things further based on their choice!”
The top five fragrances that put people off, voted by both men and women, were:
Old Spice, Avon Crystal Aura, Look by Vera Wang, Lily Of The Valley by Yardley and Cartier Santos.

The smell of success – it’s about self-confidence
Perfumedirect.com’s survey revealed that it’s actually that people think that ‘smelling good makes them feel more attractive’. 66% of people agreed that smelling good makes you more attractive.
47% of women and 29% of men have also received compliments on their smell by someone of the desirable sex; 34% by ‘strangers’.
But – eau dear – 33% said they have been told their perfume smelt bad!
When asked what puts people off a particular smell in a prospective partner, the most popular answer was because their mother, father or mother-in-law or teacher used to wear it. Because it reminds them of an ex boyfriend or girlfriend was the next top reason. Not liking the celebrity associated with the fragrance also came in the top five.
Celebrity sells
The perfume market is saturated by ‘celebrity scents’, either personally produced by a famous face or endorsed by global glamour from our screens and Instagram feeds. And it seems to be the right move – with 41% of those surveyed admitting that they bought a celebrity perfume or aftershave because they thought this would make them more attractive – and ‘like’ the celebrity! 76% of men said it was because they know women like the male star behind the product!
So is the answer a unisex perfume?
Sales of unisex perfumes are booming, but have they got pulling power? The survey says no – with only 13% of men and 17% of women including unisex perfumes in their top five sexiest scents.
Jonny Webber from perfumedirect.com said: “With Valentine’s Day just around the corner, we hope that both men and women choosing to gift perfume to a loved one make the right choice – preferably selecting a fragrance that makes their partner feel confident rather than perhaps attractive to their preferred sex.
“And for those more focused on ‘Singles Day’ on 15th February, we hope our survey is of use of what to buy!
“One final stat from our research to consider is that an overwhelming 88% of people we polled said that perfume is a romantic gift to receive.”

LONDON, 10 February, 2020: Fewer Brits are marking Valentine’s Day this year, with only just over half of us saying we’ll join in – down from seven in 10 in previous years. Two in 10 revealed they’ve bought presents for more than one valentine in the past, while a quarter have celebrated with someone other than their partner, according to a new study from market researchers, Savanta.
A far cry from the most romantic celebration of the year, one in 10 people say they’ll only get involved to take advantage of the special offers, whilst a quarter of us will use it as an excuse to treat ourselves to a gift.
Nine in 10 will utter the words “I love you” to their valentine on the day: over three quarters will tell them face-to-face, half will write it in a card while one in seven prefer to text or WhatsApp it. A handwritten love letter lags behind a Facebook or Snapchat message, with only 13% of us preparing to put pen to paper to express our feelings.
A third of us are planning to give a gift to our valentine, and for those romantics, just over half would head straight to the supermarket to buy it, while one in 10 nip to the local discount stop or a cornershop. A thoughtful one in 10 will opt for a handmade gift.
Most of us plan to spend between £10 and £49 on the day, whilst just under one in 10 will spend less than a tenner. One in twenty are planning to blow the budget by shelling out over £200.
Although a card and flowers are the two most popular items to give, a fifth intend to buy their Valentine an unromantic giftcard. Saucier presents include sex toys (which 14% say they’ll buy). However, the study suggests they may want to think carefully as four in 10 say they would not like to receive one on the day, as it ranks as the least popular Valentine’s present.
The Day also looks set to bring out the love rats, with four in 10 people admitting to saying “I love you” without meaning it and two in 10 saying they’ve bought presents for more than one valentine on the same day. A quarter have also celebrated with someone other than their current partner in the past.
Almost half of those celebrating will go out for dinner (45%) but more people will choose to spend the evening at home (30%) than will head out for a romantic drink (26%), whilst one in ten plan a spa day celebration.
Around 15% of those who won’t be celebrating think Valentine’s Day is now too commercial – the second most popular reason for not joining in after being single on the day. In fact, people spend less on their partners for Valentine’s than any other occasion such as birthdays, Christmas and anniversaries.
“Fundamentally, Valentine’s Day is about communication. Today we communicate with each other far more frequently than we ever have, and more openly,” comments Julian Dailly, senior vice president at Savanta.
“Whether it’s a quick “love you” text on the train home or a string of affectionately ambiguous emojis exchanged between lovers in the same room, we’re now more open about our feelings and see less point in storing up vaults of affection that need special days to be unlocked.
Of course, the sentiment behind Valentine’s Day remains timeless: the supremacy of love and intimacy. But our data suggests the traditional Valentine’s Day rituals appear increasingly outdated in today’s world of constant open communication.”
The research was undertaken in January 2020 with a sample of 1,001 people in the UK, aged 16 – 65. Savanta is part of the Next15 Group.

Ingredients: 50ml J&B Rare, 25ml home-made lime cordial (or bought Lime cordial)
Method: Fill a cocktail shaker with ice, add the ingredients and shake until the surface of the shaker feels chilled. Strain into a Coupe glass. Garnish with a twist of lime peel
To make your own lime cordial add the grated zest of 2 limes into a saucepan. Squeeze the juice of the 2 limes into a measuring jug, approximately 60ml, and top up with water until you have 100ml of liquid. Add to a pan with 200g of caster sugar. Heat gently, do not allow the liquid to boil and stir occasionally until the sugar has dissolved. Strain into a heatproof jug and cool.
