PEANUT BUTTER PANCAKES

You will need
3 Cups Almond Flour, 1 tbsp Ground Flaxseed, 1/2 tsp Sea Salt
1/2 tsp Baking Powder, 3 Eggs, 3/4 Cup Almond Milk
2 tbsp of Butter
To Serve
Maple Syrup, Fresh Fruit
Smooth Whole Earth Peanut Butter
(makes up to four large pancakes)
METHOD
Mix together the flour, flaxseed, salt and baking powder in a bowl.
In another bowl add the eggs and whisk, then add the milk and butter. Whisk together.
Slowly add the flour mixture to the eggs mixture, whisking as you go, to create the pancake batter. If the mixture looks dry at this point add a dash of milk and keeping adding until you have reached the desired consistency.
Lightly oil a pan and place on the heat. Add desired amount of pancake batter to the pan and cook for 3 minutes. Flip your pancake and cook for another 3 minutes until it’s golden brown. Remove from the pan and repeat to make more pancakes.
To serve, add a dollop of your favourite peanut butter and top with chopped fruit of your choice and a drizzle of maple syrup.
