Although the concept of the picnic originated in France, the British have very much taken it to their hearts.
It is thought that the average person in the UK goes on three picnics a year, enjoying the sunshine and the fresh air it brings. So grab your blankets and baskets out of the cupboards and get out to the great outdoors, for a good old-fashioned picnic.
We have the best advice for you as well as three veganised nostalgic firm favourite recipes for you: Coronation Chicken Pastries, Crustless Stuffing Quiche, and Banana, Apricot & Walnut Muffins!
Vegetarian for Life (VfL) is the leading authority on diet and healthy living advice for older vegans and vegetarians. CEO Amanda Woodvine and Roving Chef Alex are both available for further comments and advice.
VfL also offers one-day vegan baking courses for professional caterers and journalists. These will give catering teams the tools for success to use tried-and-tested egg- and dairy- replacements to create a variety of delicious desserts.
Picnics are an inexpensive, easy way to spend time with friends and family and enjoy the beautiful weather, snack on delicious foods, and soak up some extra vitamin D. This day is the ultimate excuse to plan a romantic sunset picnic for your partner, or a family-fun picnic in the park!
If you’re planning a spontaneous, last-minute picnic and aren’t sure where to go, consider opening your folding patio doors and setting up your impromptu picnic on the lawn or patio! You’ll have just as much fun picnicking outside in your back garden and you’ll have everything that you need within reach. A great option for care home residents too, if mobility is an issue or you’re currently shielding.
Tips for the perfect picnic day out
The first step in planning the ultimate picnic is to choose the day and location. You’ll want to pick a day that your friends and family are available. Be sure to check the weather ahead of time to find a nice, sunny day to picnic. Pick your favourite place, be it the local park, beach or lake. Take your favourite portable food, packing food that will travel well. Include sandwiches, cheese and crackers and lots of water. Also be sure to pack a blanket to keep you comfy, and those all important hand wipes and sanitisers.
Entertainment
If you’ll be spending the entire day picnicking, think about some fun games for picnickers to play. The grandkids will have fun with a traditional game of football, rounders or frisbee, though follow safe guidance if they’re not all from the same household. For those looking to relax, bring some magazines or a good book. You could also bring some music to enjoy.
Remember to bring sunscreen, sunglasses and hats. Some insect repellent might come in handy, too.
Don’t forget to clear up after your day out, ensuring that you take all your litter with you.
Here are some recipes and ideas to make your next picnic even tastier:

Got Hustle? Ambition? Big Dreams and Lofty Goals? Bizzy Cold Brew Wants to Give You $50,000!
CEO of ready to drink coffee brand named regional EY ‘Entrepreneur of the Year’ reveals what’s driving major market share growth; details nationwide contest awarding $50,000 cash to the ‘Bizzy’est Person in America’
With the United States ready-to-drink (RTD) coffee market estimated [2] at USD 6.46 billion in 2024 and forecasted to reach $8.61 Billion by 2029, it’s clear that Americans covet a killer cup of Joe. Millions of these coffee aficionados not only have a penchant for the convenience of ready to drink formats, but they are also partial to strong coffee beverages to help keep the fires of innovation, creativity and endurance burning bright.
For their own part, makers of the ambitiously strong Bizzy Cold Brew [1] coffee know all too well that hard work can be a grind. This is why company founders Alex French and Andrew Healy are hell bent on recognizing–and energizing–Bizzy people who are working tirelessly toward their goals. The company has launched a nationwide, cash-fuelled contest with $70,000 up for grabs–fully $50,000 of which will go to the person voted as the “Bizzy’est Person in America.”
Known for brewing exceptionally strong coffee, the folks at Bizzy Cold Brew are no stranger to bold moves. With a grand prize of $50,000 and $20,000 earmarked for runner ups, the brand has invited all “Bizzy people” to showcase their drive and ambition for a chance to win big in the contest–including cold hard cash as well as bragging rights. Each of the winners will also receive a one-year supply of smooth,
strong ready-to-drink Bizzy Cold Brew coffee for themselves and up to five of their team members to fuel their ambitions. To further recognize the efforts of Bizzy people, the 4th and 5th place contest winners will each receive a one-year supply of Bizzy Cold Brew.
Below, Bizzy Cold Brew Co-Founder and CEO Alex French sheds light on what motivated the contest and how the brand is making its mark on the RTD coffee beverage industry.
Q: What was the core inspiration for the Bizzy’est Person in America Contest?
AF: Ever since starting our company in 2013, we’ve always celebrated the power of ambition. This contest is our way of rewarding those individuals who inspire others with their relentless drive and passion. Our goal is to use the Bizzy’est Person in America Contest to reward the big-idea thinkers, entrepreneurs, competitors, and innovators who tirelessly pursue their dreams. Ultimately, we want to support Bizzy people–those who embody the ethos of ambition and strive for excellence in all that they do.
Q: How can someone enter the contest?
AF: To enter, ambitious individuals can submit their entries on the contest landing page – bizzycoldbrew.com/bpa [3] – between June 1 and July 27, 2024. The voting period to determine the Bizzy’est Person in America will commence on August 1, 2024, and run through August 22, 2024. Public voting will determine the winners of the contest.
Q: What do you hope people get out of the contest and what is the message you want to send about your business in relation?
AF: Drive and ambition, and leaning into risk along the way, have paid off for me and my Co-Founder, Andrew, resulting in a highly successful business. It hasn’t been easy and it’s been an extraordinary amount of hard work, but that effort has helped us achieve our dreams of being entrepreneurs and business owners. In fact, we were just recognized by Ernst & Young as Heartland region winners of the EY “Entrepreneur of the Year” Award!
Q: Your brand has gained significant market share, greatly expanding its retail presence in recent years. Where exactly can consumers now find Bizzy products?
AF: Yes, our USDA-Certified organic, ready-to-drink cold brew coffee is sold in more than 7,500 grocery stores across the United States, including Sprouts Farmers Market, Target, Stop & Shop, H-E-B, Ralphs, Publix, Fred Meyer, certain Kroger divisions and more. Bizzy’s coarse ground coffee and brew bags are available on Amazon, Walmart.com and on the Bizzy Cold Brew website.
Q: How did the company originally get its start?
AF: Out of a true love of the product, my business partner Andrew and I started making cold brew coffee in our cramped apartment in 2013 after being fed up with paying $5 for a cup from a coffee shop. With Andrew’s background in R&D Engineering, my own background in Consumer Research, and a drive to endlessly pursue perfection both in business and in our product, we have worked tirelessly to develop the best tasting cold brew coffee on the market.
Early on we researched and tested every variable, including the bean origins, roast profiles, grind sizes, brewing temperatures and brewing times, filtration methods, packaging, and storage conditions. We then started bottling it, giving it to friends for feedback, and continued to brew our own coffee formulations every single day.
After spending 3 years on research and thousands of dollars on coffee, commercial kitchen rent and bottles, we ultimately went “all in” and turned our passion into a career. Bizzy has grown significantly since those early days, with a full production facility, brewing team and front office of cold brew fanatics. Today, we’re fortunate to have many of the nation’s leading brick-and-mortar and online retailers carrying Bizzy Cold Brew.
Q: What can you say about your bean–and brewing process at large–that really sets your coffee drinks apart in the marketplace?
AF: No surprise, a good cup of coffee starts with a high-quality bean. After years of research, we settled on some pretty delicious organic certified Arabica beans that are perfect for cold brew. Our USDA Organic Certified coffee is grown in some of the world’s most premier coffee regions.
We then coarsely grind and micro sift the coffee beans for even size. The roasting process is as much art as it is a science. We roast different origins to different levels, cold brew them, and test which version tastes the best.
And one of the most important steps in our process is our brew time. Our beverages are brewed slow for 18 hours and cold filtered, creating the strongest and most flavorful coffee possible.
Q: How would you describe the difference between your various roasts?
AF: Bizzy’s Light Roast has flavor notes of floral and citrus. It is the highest in caffeine of all our roast profiles, with 302 mg per serving.
Our Breakfast Blend is balanced with fruity, cocoa and toffee flavour notes and has 275mg caffeine per serving.
Medium roast is very nicely balanced with notes of caramel and hazelnut. The Medium Roast has 277mg caffeine per serving.
Our Espresso Blend is balanced with notes of chocolate, berry and brown sugar, with 273mg of caffeine per serving.
No matter what flavor profile a coffee lover is looking for, Bizzy has something for everyone.
Q: Much attention is often paid to the grind of the coffee bean. How does this factor into the process?
AF: Yes, the grind is an important factor in getting a good, consistent cold brew, and we take it very seriously at Bizzy. Make the particles too small and you’ll get over-extracted and bitter tastes. Make them too coarse and you will get under-extracted and sour coffee.
We use highly precise methods to grind our coffee to very specific coarseness, resulting in the perfect grind size for making cold brew coffee.
Q: You mentioned micro-sifting earlier. Tell us about that aspect of production.
AF: Micro-sifting is a process that sets our coffee apart from the rest. After the coffee has been ground, it’s passed through a series of sieves that filter out the unwanted particle sizes. We’re then left with the perfect coarseness for cold brewing, a particle size we’ve developed from years of research and testing. This extra step ensures a consistent, deliciously strong and smooth cup of cold brew.
Q: Is there anything else that sets your coffee apart from the others?
AF: Yes, absolutely. It’s our obsessive attention to the details along every step of the process that sum up to a great product. Naturally we start with the water, and we use reverse osmosis water purification as a contributing factor to our amazing cold brew.
We also continuously monitor brewing temperatures to make sure everything stays consistent from brew to brew. It may sound crazy to some, but every little variable has an effect on the outcome, so we do our best to control it all. It’s highly time- and labor-intensive, but we will not sacrifice on the exceptional quality of our cold brew.
Time is of the essence when it comes to brewing. In fact, that’s how cold brew coffee is possible, by replacing heat for time in the brewing equation. We brew every batch of Bizzy for 18 hours, longer than most other cold brews on the shelf. Yes, that’s a very long time. But this gives us the boldest, smoothest flavor and caffeine kick possible.
Also, heat should never be involved in the cold brew process. It defeats the entire purpose. The lack of heat and lengthier brew time is what gives cold brew its distinct flavor characteristics that are sought after over its hot coffee counterpart. All that sweetness and less acidic taste comes from the lack of heat. The end result is a smooth, strong cold brew.
Q: What, if anything, is your company doing in the realm of sustainability?
AF: For us, the “endless pursuit of perfection” isn’t just about the product we make–although we think it’s pretty perfect. While our cold brew is critical to our success, we want to do more and what’s right. We continue to assess our practices and remain diligent in looking for ways to up our sustainability game.
We use data to drive every aspect of our business, including in setting our sustainability goals. We’re continually assessing, measuring and improving, and it is what will get us to our goals of carbon neutrality and upcycling 100% of our spent coffee grounds by 2025 and being plastic negative by 2030. We’ve also transitioned to using 100% post-consumer recycled bottles for our cold brew, which we’re incredibly proud of. At Bizzy, we are a small, passionate “Brew Crew” who strive to do better every single day.
With the company’s endless pursuit of perfection across all operational fronts, Bizzy continues to push the envelope. The company is not only re-defining the standard for truly exceptional strong cold brew coffee, but also celebrating others who are ambitiously striving toward their own dreams.

The Garden of Eva’s American Southern products are built for picnics!
Eva Thorne, the founder of The Garden of Eva, grew up pickling and preserving with her Virginia-born mother, Tina, three seasons out of four and she is excited to bring these authentic, Southern flavours to the UK. Their products are in independents, Whole Foods Market UK, and now, Selfridges!!
Chow Chow (pickled relish beloved across the South): A dollop or two of chow chow makes potato salad, pasta salad, chicken salad, or tuna salad pop. Honest Burgers used it to make a monthly special – a New Orleans fried chicken sandwich that outsold other monthly burger specials at the time.
Chili-watermelon jam (named by Whole Foods Market UK’s 2024 Food and Drinks Trends for complex heat) is a great, zest sandwich spread. Or try it with cheese.
The 2-star Great Taste award-winning, handcrafted pickled watermelon rind is great with cheese and charcuterie. It also goes great with barbecued ribs and pulled pork!

Eva Thorne, the founder of The Garden of Eva, has a son, Brooks. He enjoyed his several years playing rugby for London Scottish, which is based in Richmond, London. He doesn’t play now but learned important skills from his time with Scottish! He may find his way back onto the pitch again!

Furniture expert reveals the best garden layout for hosting party this summer
With many sporting events taking place this summer and temperatures soaring, many Brits will be looking to host BBQs and gatherings in their garden.
Accommodating guests can be difficult, especially if you are working with a small garden, but there are a few tricks you can employ to make the most out of your space.
Tristan Lynch, CEO of garden and home furniture retailer Roseland Furniture, has shared how to make the most out of your garden space and details the best layout for hosting family and friends this summer.
Make the most out of your space
Hosting can be daunting if you have only a small garden, but it is possible to make the most of your space.
Buy practical furniture that can be stored easily. Garden tables with benches are great because you can tuck the benches under the table to save space, and they can seat more people.
Also, use light furniture that can be moved and repositioned easily, this will save a lot of time and energy.
Make the most of your indoor space. If you have patio or bifold doors leading into your garden, keep them open and keep food and drinks indoors. This ensures there is more space on the tables.
Cook inside rather than outside. A BBQ can take up space, so try preparing the food in advance. If you still want a BBQ, try using a disposable BBQ.
Remove any furniture or clutter from the garden that you do not need beforehand.
Stick to minimal decor. If you still want something more formal and you want to decorate your table, try keeping it as minimal as possible. Try hanging a garland above the table, using small and thin vases, and avoiding using big centrepieces.
Create different zones in your garden. Separate your dining area from the rest of your garden by placing potted plants or rearranging furniture. This ensures you have separate areas for eating, socialising, and your garden won’t feel cramped.
Decide on a focal point
If you’re hosting a viewing party for a sporting event this summer, the television or projector screen should be the main focal point.
It is best to position the screen in a shady spot and consider what is needed to set up the television, e.g., an extension lead. If you are using an extension lead, make sure it is out of the way and will not be a trip hazard.
Position the furniture so that all your guests can view the screen well. You want it to be as comfortable and inviting as possible so use a selection of comfy cushions and position footstalls to make it feel more homely.
Consider different types of lighting
Proper lighting can make a huge difference and create a cosy atmosphere. Garden lighting also highlights areas of your garden you want to draw attention to.
A simple but effective lighting solution is to use string lights. These are easy to put up and take down, and they can be tied along a wall, fence, or even around trees. String lights are also cost-effective, battery-powered, and available in a variety of designs and colours.
Lanterns are a subtle way of creating a pleasant atmosphere that is also low maintenance. Solar-powered lanterns can be dotted around the edges of your garden, on decking, or even placed on tables for when it gets darker.
Clustering orb lights are another low maintenance but effective way to add character to your garden. If you’re hosting a party, try colour changing orb lights or grouping different colours to create a fun atmosphere.
For a more permanent lighting feature, install spotlights in your decking to highlight seating areas and add light to areas where you think they will need it once dark.
Rearrange your furniture
The type of furniture and arrangement in your garden can make a huge difference to the event you’re hosting.
If you’re hosting a viewing party, you want sofas and comfy chairs facing the screen.
If you are hosting a birthday party or a hen party, try setting up small seating areas with coffee tables where guests can move around and socialise with other guests.
Set up shaded areas. Either use a gazebo or use naturally shaded areas in your garden. Place a picnic blanket and cushions or chairs for those who would rather stay out of the sun.
Outdoor sofas are an excellent way of creating a homely and cosy vibe. L-shaped sofas or corner sofas can accommodate more guests and are great for when your guests want to drink and chat.
Firepits are more permanent and more costly, but they can create a cosy, intimate atmosphere. If you’re hosting a small gathering, sitting around a firepit at the end of the evening with a drink is a good way of winding down after a long summer’s day.
Tristan Lynch, CEO of Roseland Furniture, commented:
“Hosting can be quite a daunting task, with many details to consider, such as food, drink, and the unpredictable British weather. Hosting a large family BBQ or a small get together with friends doesn’t have to be complicated. Making simple, subtle changes to furniture and lighting can transform your garden into a cosy, homely and fun environment that will make hosting stress-free and enjoyable.
“With the Euros, Wimbledon and the Olympics all coinciding this summer, it has never been a better time to host a viewing party and BBQ with your family and friends.”

Escape the Ordinary picnic food with Insalata di Riso (Italianstyle Rice Salad)
Super easy to make, Insalata di Riso is a vibrant Italian rice salad that’s perfect for a summer
picnic.
If you are looking for a dish that bursts with flavour and transcends the typical picnic salad, then
look no further than Insalata di Riso. This isn’t your average picnic dish; it’s a symphony of textures
and tastes, featuring fluffy rice, a medley of colourful vegetables, and flaked tuna, all bound
together with a creamy homemade mayonnaise dressing.
Ingredients:
• For the Rice:
◦ 300 grams long-grain white rice
◦ 750 grams water
◦ 5 grams salt
• For the Vegetables and Meats:
◦ 75 grams canned peas
◦ 75 grams pitted olives and capers (drained, optional)
◦ 125 grams cherry tomatoes, halved and quartered
◦ 100 grams diced mozzarella cheese
◦ 150 grams diced cooked ham (prosciutto cotto)
◦ 160 grams canned tuna in olive oil, drained
• For the Dressing:
◦ 125 grams mayonnaise
◦ 3 tablespoons extra virgin olive oil
◦ 1 pinch dried oregano
◦ Salt and freshly ground black pepper to taste
Instructions:
1. Cook the Rice: Rinse the rice well. In a large pot, combine the rice, water, and salt. Bring to
a boil, then reduce heat, cover, and simmer for 15-18 minutes, or until rice is cooked
through. Remove from heat and drain. Let cool completely.
2. Prepare the ingredients: Dice the cherry tomatoes, mozzarella cheese, and cooked ham.
3. Assemble the Salad: In a large bowl, combine the cooled rice, diced vegetables, cooked
ham, cheese, and flaked tuna.
4. Dress the Salad: In a separate bowl, whisk together the mayonnaise, olive oil, oregano, salt,
and pepper. Pour the dressing over the rice mixture and toss gently to coat all ingredients
evenly.
5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes, or up to overnight,
to allow the flavours to meld. Garnish with fresh parsley before serving, if desired.
Tips:
• For a richer flavour, use homemade mayonnaise in the dressing (recipe below).
• Feel free to customize the recipe! Here are some additional ingredients you can add:
chopped artichoke hearts, roasted red peppers, diced salami, diced red bell pepper, any type
of cheese you like, chopped cooked sausage, or gherkins.
• Leftovers can be stored in the refrigerator for up to 3 days.
Super Quick Homemade Mayonnaise
(Optional, but recommended for a richer flavour)
Ingredients:
• 1 large egg
• 1 tablespoon lemon juice
• 1 teaspoon vinegar
• 80 grams neutral oil (like vegetable or grapeseed oil)
• Salt and freshly ground black pepper to taste
Instructions:
1. Gather Your Ingredients: Make sure all your ingredients are at room temperature for best
results.
2. Emulsify the Base: Add all ingredients to a container suitable for an immersion blender.
3. Slowly Add the Oil: With the immersion blender on low speed, positioned at the bottom of
the jar, blend (make sure you blend the yolk first). As the mixture thickens, you can slowly
lift the blender.
4. Season and Enjoy: Once the mayonnaise is thick and creamy, season with salt and pepper
to taste. Enjoy your homemade mayo immediately or store it in an airtight container in the
refrigerator for up to 3 days
