FRENCH TOAST WITH COFFEE, CARAMEL & HAZELNUT SYRUP
This brunch staple is given a twist with an indulgent salted caramel topping. Carte Noire instant coffee means no mess or fuss and just totally delicious coffee-infused results.
DETAILS
FEEDS: 4 PREPARATION
TIME: 10 minutes
COOKING TIME: 10 minutes
FRENCH TOAST INGREDIENTS:
1 medium/small crusty white loaf
5 large eggs – whisked together
3 heaped tbsp plain flour
3 tbsp caster sugar
2 pinches of cinnamon
2 pinches of ground nutmeg
1 pinch of mace
Generous sprinkle of sea salt flakes
Oil for frying
30g butter for frying
COFFEE, CARAMEL & HAZELNUT SYRUP INGREDIENTS:
5 tbsp / 90g butter
125g light brown sugar
170ml single cream
1 ½ tsp of Carte Noire instant coffee
¼ tsp vanilla bean paste / 1tsp vanilla extract
Sprinkle of sea salt flakes – to taste
FRENCH TOAST METHOD:
Begin by slicing your bread. It actually works in your favour if the bread is a little stale.
Next, mix together all french toast ingredients to make an egg mix.
Soak the bread in egg mix for around 30 seconds flipping so each side is evenly coated.
Heat a non-stick pan with a generous drizzle of oil.
Fry bread on both sides until golden and crisp adding a small knob of butter once it starts to begin to turn crispy. This will ensure you cook it thoroughly without burning the bread.
Remove and keep warm in the oven on 60°C.
COFFEE, CARAMEL & HAZELNUT SYRUP METHOD:
Melt the butter in a small pan over a medium to low heat until liquid.
Whisk sugar, coffee and cream into the melted butter, making sure the coffee is fully dissolved.
Gently bring to the boil, whisking the whole time.
Reduce the heat and continue to whisk for another 2-3 minutes to allow the sauce to thicken a little.
Remove from the heat and add in the vanilla paste.
Drizzle the syrup over french toast if serving immediately.
(You can also make the syrup before the toast and store in the fridge. If you do this, make sure to gently reheat when ready to use as it will solidify in the fridge.)
ICE CREAM METHOD:
Simply blitz frozen banana and scoop into balls
to serve alongside the French Toast.
COFFE & YOGHURT ICE POPS
DETAILS:
MAKES: 8
PREPARATION TIME: 5 minutes
FREEZING TIME: 2 hours
INGREDIENTS:
600g good quality natural yoghurt
4 tbsp maple syrup or honey
3 tbsp hazelnut syrup
Either a single or double shot (depending on how strong you want your ice pops) of Carte Noire Classic
METHOD:
Combine the yoghurt, maple syrup, honey and hazelnut syrup, adjusting the sweetness to your preference
Pour your espresso into the bottom of the ice pop moulds and then spoon or pour in the yoghurt, using a spoon gently mix the espresso through the yoghurt. Depending on how much you combine will affect how marbled it is
Freeze for at least two hours and serve
TIP: These are also great blitzed into an ice coffee style smoothie
BOMBOLONI WITH COFFEE & HAZELNUT CREAM
A traditional Italian breakfast option packed full of the most decadently rich hazelnut and coffee creme patissiere. Carte Noire instant coffee adds a rich depth of flavour and is super simple to incorporate into the recipe, working perfectly with the dish. Serve alongside an espresso and you’re good to go.

BOMBOLONI INGREDIENTS:
250g bread flour
250g plain white flour
75g granulated sugar
100g unsalted butter – room temperature
20g fresh yeast/ 7g dry instant yeast
7g table salt
3 large eggs/150g
2 egg yolks/40g
110ml luke-warm water
zest of 1 orange
1 tsp vanilla extract
granulated sugar for coating
COFFE AND HAZELNUT CREAM FILLING:
250ml milk
4tsp of Carte Noire
3 tbsp hazelnut syrup
½ tsp vanilla bean/paste
2 large egg yolks
45g granulated sugar
15g corn flour
15g unsalted butter
2 sheets of gelatine
150ml double cream
BOMBOLONI METHOD:
Using a food processor and the dough-hook, combine all ingredients except for one of the whole eggs and beat on a medium speed for 5 minutes then on a high speed for 5 more minutes
Add in the remaining egg and beat on a medium speed until a smooth and elastic dough forms. You may have to add a little more flour if it seems too sticky
Knead by hand for a couple of minutes and then place the dough in a large, lightly oiled bowl. Cover the bowl with cling film and allow the dough to rise in a warm place for at least 2 hours and until it has roughly tripled in size
After the first rise, lightly knead the dough then roll it out to 1.5 cm thickness and cut out rounds. A wine glass does the job to achieve the right size
Transfer all your rounds to baking sheets lined with wax paper and then cover with cling film or a tea towel. Allow the bomboloni to rise for another hour and a half until they triple in size once more
When ready to fry heat vegetable oil in a large, deep pan to a temperature between 170-180C
Fry the bomboloni a few at a time making sure to not crowd the pan. Fry them for about 2 minutes on each side until they are golden brown, then drain off the excess oil and set them on a wire rack to cool
While they are still warm pour some granulated sugar in a small bowl and roll the bomboloni around until completely coated in the sugar
You can also bake these at 350F for about 20 minutes instead of frying
COFFEE AND HAZELNUT CREAM FILLING METHOD:
Begin by placing the gelatine sheets in cold water for 10 minutes
Combine milk, instant coffee, hazelnut syrup and vanilla paste with half of the granulated sugar in a saucepan. Bring almost to the boil over a medium to low heat
In a small bowl combine the remaining sugar, egg yolks and cornflour. Whisk until thoroughly combined
Pour a small amount of the warmed milk mixture into the bowl with the egg yolks, sugar and cornflour, whisking the whole time. After 30 seconds or so add another splash of the warm milk mixture, again whisking the whole time.
Next pour the egg, sugar and milk mixture back into the pan with the remaining warmed milk, ensuring you stir continuously to avoid any lumps or curdling
Now place all the combined ingredients back on the heat and allow to boil for around 2 minutes stirring the whole time to avoid lumps forming
Remove from the heat, add in the butter and whisk until dissolved
Next add in the softened sheets of gelatine and again whisk until fully dissolved
Pour the full final mix into a bowl or tray and cover with cling film to avoid a skin forming
Whip up the double cream until it begins to hold its shape then combine with the cooled pastry cream then return to the fridge to keep shape
Pipe into bomboloni shortly before serving

Athlete voice vital for future of sport
says Baroness Tanni Grey-Thompson
A genuine athlete voice is at the heart of duty of care in sport, Baroness Tanni Grey-Thompson told an industry conference in Cardiff today.
And while there are some good examples of progress since the former Paralympian’s Duty of Care in Sport Review, she highlighted that more still needs to be done.
Speaking at the Sport Ethics and Integrity Conference 2018, she said:
“I must admit there wasn’t universal enthusiasm when I first set out to pull the work together. In fact, I was told by many people there wasn’t a need for it.
“There was a shift in opinion when several sports issues started going public. I had many of those people come back to me to say they didn’t know there were these issues in their sport.
“Should we have seen it coming? Yes, we should have.
“I don’t think we need more money it’s about using what we have in the best way we can.
“It’s not just about the medals we have to be realistic. Elite sport is tough but that’s no excuse to treat people in any way you want.
“There are so many good things that sport can bring, it’s not just about gold medals.
“A genuine athlete voice is really important.

“The UK-wide debate (through UK Sport) is a good thing and we need to embrace that debate.
“The Welsh approach at the Commonwealth Games shows that we can be successful without medal targets.
“We can’t keep adding one more to a medal target and keep expecting great things, we need to think differently. We have to challenge sports in a way that they haven’t been challenged before.
“I’m not willing for my 16 year-old daughter and other young people to be in a sporting system that treats them poorly.”
The conference was a partnership between Sport Wales and Swansea University, sponsored by Loosemores Solicitors.
Director of Elite Performance at Sport Wales, Brian Davies commented:
“The conference exemplified that, whilst sport isn’t ignorant of the issues in the debate, there is plenty still to do. Sport continues to be an incredibly powerful tool for good but sometimes the moral compass needs a reset and I’m really pleased that the delegates in the room were very positive about the actions that need to be taken.”
Other speakers included Professor Nicola Phillips of Cardiff University and Team Wales Chef de Mission at Gold Coast 2018, delivering a keynote speech about the responsibilities to athletes. The conference also heard from Nicole Sapstead of UK Anti-Doping, John Donnelly of UK Sport, Dr David McArdle of Stirling University and former athletes David Cotterill (football) and Mica Moore (athletics and bobsleigh). The conference was opened by the Welsh Government’s Minister for Culture, Tourism and Sport, Lord Dafydd Elis-Thomas.

MONDAY 19TH NOVEMBER 2018 – LONDON, UK – Generous Brits are set to embark on a festive spending bonanza over the next six weeks, according to figures released today.
The findings released today by VoucherCodes.co.uk, the leading savings site, show that Brits are set to spend £203.98m more on children’s Christmas presents than their parents did a generation ago, considering inflation*. The survey of over 2,000 people across the country discovered that the average parent will spend £119.45 per child on Christmas presents this year, an increase of £50.21 on what their own parents spent on them – meaning the cost of Christmas has increased by £2.68bn (73%) in a generation!
Half (47%) of parents believe that their children ask for more presents than they did at their age and the research has revealed just how the expense of Christmas has increased for the average modern family as a result of meeting these greater expectations.
With a quarter (23%) of parents spending over £200 on Christmas presents per child, compared to just 6% a generation ago, the research has highlighted the financial pressures that families are now under to provide a special Christmas for their kids. This is particularly true for parents under the age of 35, with three out of five (59%) admitting they’re saving money for Christmas by mid-November in contrast to just a third (33%) at the same time a decade ago.
Children’s wish list
With so much money being spent, it’s important that parents are invested in what they’re purchasing. Despite this, a third (37%) admit they buy Christmas gifts without knowing if their children would actually want them and a quarter (28%) confess they’ve been guilty of buying rubbish presents because they left it too late to go shopping.
This is perhaps best explained in the huge shift in priorities between what children are looking for now compared to when parents were anxiously looking under the Christmas tree. Indeed, two out of five (38%) children now want to find a games console in their stocking, while a third also ask for a mobile phone (35%) and an iPad or iPod (32%).

The research has revealed the different demands that children had a generation ago, leading three out of ten (30%) parents to admit their children can be ungrateful at Christmas time. Indeed, it was simple board games (35%) and books (30%) that topped their own wish lists alongside toys rather than a games console (10%) or mobile phone (8%).
Parents’ wish list
It must not be forgotten that Christmas is also a time for children to treat their parents with gifts too. The average child under 10 years old will “spend” a total of £26.71 on Mum and Dad for Christmas, with chocolates (44%), perfume/aftershave (28%) and clothing (25%) being the most popular presents. In contrast, once we reach 18 years old, the average adult spends £56.40 on Christmas presents for their parents.
While Dads are eyeing clothes (30%) and entertainment in the form of music or films (25%) this Christmas, the research has found it is the thought that counts for Mums. Four out of five (81%) would rather receive less expensive, more thoughtful presents. Although the majority (54%) of Mums would prefer handmade gifts from their kids than those bought from a store, only a third (31%) of children under the age of 10 choose handmade gifts.

With Mums far more likely to receive handmade gifts, the research has revealed that, overall, the nation spends an average of 12% more on gifts bought for Dads (£21.75) than presents for Mums (£19.43). Overall, this is the equivalent of £27.4m more being spent on presents for Dads across the nation than Mums.
Embracing the festive spirit
The full-blown festive season is on the horizon and fast approaching. Indeed, the research has indicated almost half (45%) of Brits are already feeling in the Christmas spirit now that the lights have started to be switched on across the country. Meanwhile, three out of ten (30%) young adults have been embracing Christmas the moment Halloween and Bonfire Night were over.
The enthusiasm of children can make even the most festive adult look like a Grinch at Christmas. The research has found that two-thirds (63%) of children under the age of 10 believe in Santa, with the majority looking forward to leaving mince pies and milk for him (56%) and a carrot for Rudolph (55%). Half (54%) will be writing a letter to Santa, detailing why they’ve been good this year and what they’d like to find under the tree this Christmas, while one in ten (9%) will instead be contacting Santa on social media.
