Turkey and Stuffing Pie
This recipe is great for using up Christmas leftovers. If you haven’t enough turkey to fill the pie dish try adding canned ham or additional vegetables – leeks and broccoli also work well.
Serves 4-6
Ingredients:
For the filling
295g can condensed mushroom soup
198g can sweetcorn, drained
400 – 500g cooked turkey meat, cut into bite-size chunks
100g stuffing, cut into bite size pieces
4 Tbsp crème fraîche or milk
Seasoning
For the pastry
500g shortcrust pastry
1 Tbsp milk or beaten egg for glazing
Method:
Preheat your oven to fan 170°C, conventional 190°C, gas 5.
Empty the soup into a bowl and stir in the crème fraîche or milk.
Add the turkey, stuffing, sweetcorn and seasoning to the bowl.
Grease a 20cm ovenproof pie dish, then take two thirds of the pastry, roll it out on a floured surface and lay it onto the dish. Trim off the excess pastry.
Place the prepared filling into the pastry-lined dish.
Dampen the edge of the pastry rim with water, roll out the remaining pastry and cover the pie. Seal the edges well and trim neatly.
Make a small hole in the centre of the pie to allow steam to escape, then brush the surface with milkor beaten egg.
Bake for 30 – 40 minutes until the pastry is golden.
Retro Trifle
In need of a delicious dessert over the Christmas period? Try our new Retro Trifle! Serves 8
Ingredients:
4 – 6 trifle sponges, halved
1 x 298g can mandarin segments
2 tbsp brandy or sherry (optional)
1 x 135g pack orange jelly
2 x 400g cans custard
1 x 283g can extra thick cream
2 – 3 tbsp toasted flaked almonds
Method:
Arrange the sponge fingers in the bottom of the trifle bowl.
Drain the mandarin segments, reserving the juice. Sprinkle the brandy, sherry or 2 tablespoons of mandarin juice over the sponge fingers and scatter the segments over the top.
Cut up the jelly cubes and pop into a heatproof jug. Add 285ml boiling water and stir until dissolved. Mix together the remaining mandarin juice and enough cold water to make 285ml, stir into the jelly and leave to cool. When cooled, carefully pour the jelly over the mandarin segments and refrigerate until set.
When the jelly is set, spread the custard carefully over the jelly. Whisk the can of extra thick cream until thickened and spoon onto the custard. Sprinkle over the toasted almonds just before serving.
Meringue wreath with Christmas spiced apricots
Serves 6-8
Ingredients:
1 x 400g can chickpeas, drained and liquid reserved
125g caster sugar
2 tbsp dark brown sugar
½ tsp mixed spice
1 tsp cinnamon
1 tsp vanilla extract
2 x 400g can apricot halves, drained and juice reserved
1 x 400g can coconut milk, refrigerated overnight
1 heaped tbsp icing sugar
Method:
Pre-heat the oven to 120°C. Line a large baking sheet with baking parchment. Using a plate or cake tin, draw a 28cm circle on the parchment (remember to turn it over or you may get pencil on your meringue).
Using a stand mixer whisk the chickpea liquid for approx 10 minutes until thick and forms soft peaks. 1 teaspoon at a time, add the caster sugar whisking between each addition. Then, continue whisking for 2 – 3 minutes to ensure all the caster sugar is combined.
Using a large spoon, spoon the meringue onto the parchment in large blobs to make a wreath shape, using the pencil circle as a guide. Using the back of a spoon, make a dip in the top of each blob.
Bake for 2 – 2.5 hours until crisp, then turn off the oven and leave to cool with the oven door shut, for approx 1 hour. Remove from the oven and store in an airtight container (if not using straight away).
Pre-heat the oven to 200°C. In a large bowl mix together the brown sugar, spices and vanilla. Gently stir through the drained apricots to coat. Spoon the mixture onto a baking tray and roast for 12 – 15 minutes until warmed through and the sugar has melted.
Open the coconut milk tins and pour off the clear liquid. Whisk the coconut cream until thick. Gently stir through the icing sugar. Add a little of the reserved apricot juice if the cream is too thick.
To serve, place the meringue wreath onto a large flat plate and top with the coconut cream and apricots. Sprinkle with a little extra cinnamon, if desired.
Leftover Turkey Hotpot
This recipe is fantastic for using any leftover Christmas turkey! If you don’t have any turkey to spare, you can use other meats such as canned ham, or pack it full with any canned vegetables you can find in your cupboard.
Serves 4
Ingredients:
25g butter, melted
1 x 300g can sliced carrots
1 x 300g can garden peas
350g cooked turkey, shredded
1 x 300g can condensed cream of chicken soup
1 x 400g can peeled new potatoes, sliced
Method:
Pre-heat oven to 190°c, Gas 5 and lightly grease an ovenproof baking dish.
Mix together the carrots, peas and turkey. Stir through the condensed soup until combined and spoon into the baking dish.
Top with the sliced potatoes and brush with melted butter. Bake for 35 – 40 minutes until golden and heated through.

Sticky Toffee Brioche Wreath
Ingredients
• 250ml whipping cream (or double cream)
• Toffee or salted caramel sauce
• Toffee and mini fudge pieces
Method
1. Remove the wreath carefully from the foil tray and place on a board. Cut in half horizontally with a long knife.
2. Whip the cream to soft peaks then swirl in some toffee sauce.
3. Spoon onto the base of the wreath and scatter over the toffee and fudge pieces. Add a little more sauce and then carefully place on top.
