\nShared from the Easy Peasy Baking Campaign, you won’t believe such a stunning cake could be so simple. Made using only 10 ingredients and 5 pieces of equipment, you’ll whip up this incredible coffee layer cake, sandwiched with creamy smooth coffee buttercream and caramel, all topped with crunchy pecans…yum!<\/p>\n

Coffee, Caramel & Pecan Cake
\nMakes one 3 layer 6\u201d cake or one 2 layer 8\u201d cake
\n370g unsalted butter, softened, split into 250g and 120g
\n400g caster sugar split into 250g and 150g
\n4 eggs
\n250g self-raising flour
\n1 tsp baking powder
\n3 fresh espressos (120ml) or 1 tbsp + 1 tsp instant coffee dissolved in 5 tbsp of boiling water
\n150g pecans, roughly chopped + extra for decorating
\n150ml double cream
\n1 tsp salt
\n500g icing sugar
\nEquipment
\n2 x 8\u201d cake tins, lined
\nMixing bowl
\nWooden spoon
\nKnife
\nSaucepan
\nMethod
\n1. Preheat your oven to 160\u00b0C (fan) and line your cake tins with baking parchment.
\n2. To make the sponge, cream together 250g of the butter and 250g of the caster sugar then add the eggs and mix until combined.
\n3. Add in the flour and baking powder, followed by two of the espressos, and mix until no lumps remain.
\n4. Gently stir in the roughly chopped pecans and divide the batter evenly between the two or three cake tins, depending on how many you\u2019re using. Use the back of the wooden spoon to level.
\n5. Bake the sponges for 20-25 minutes until golden and springy to touch and allow to cool completely. If they aren\u2019t springy, put back into the oven and check again after 5 minutes.
\n6. Whilst the sponges are cooling, make your caramel by heating the remaining 150g of caster sugar and water together in a saucepan over a medium-high heat until boiling, without stirring \u2013 the sugar will naturally dissolve. Try not to agitate the caramel as it cooks and only swirl if necessary, do not stir with a spoon.
\n7. Once the caramel has become amber in colour (around 5 minutes) and the bubbles are small, pour in the double cream, stirring continuously with a wooden spoon as you do so. It will bubble up and create a lot of steam, so be cautious. Once combined, stir in the salt and transfer the caramel to a bowl to cool.
\n8. Once the caramel is cool, rinse the mixing bowl and spoon to make your buttercream. Combine the remaining 120g butter, icing sugar, final espresso in the bowl and cream together until smooth.
\n9. Save 60g caramel for the drip, then assemble your cake by sandwiching each layer with the buttercream and a spoonful of caramel spread on top before lightly coating the top and sides with the remaining buttercream to achieve a naked cake effect, scraping off any excess with the knife. If your remaining caramel has thickened up, pop it in the microwave for 30 seconds before pouring on top of the cake and teasing down the sides to create drips using the tip of your knife.
\n10. Sprinkle some roughly chopped and whole pecans around the top edge and serve.

Art on a Postcard marks International Women\u2019s Day 2021 with a celebration of the multiplicities contained in every woman. AOAP has invited female identifying artists to respond to an initiative called I AM created by The Hepatitis C Trust Prison Peer Educator Jane Shea.<\/p>\n

Jane feels that the women the Trust works with are too often referred to as \u2018an addict\u2019 or \u2018a prisoner\u2019 and feels strongly that no one is one dimensional and furthermore it is the multiplicities in women that bind us together. A publication created to support the initiative was distributed among the women the Trust serve with a space to list the things they identify as being, without judgment or justification. One might be an addict, but they could also be a mathematician, a mother, a lawyer, a nurse and so on.<\/p>\n

The collated responses have been used as an inspiration for the artwork created for the auction by such luminaries as Claudette Johnson known for her large scale paintings of black women; \u2018Punjabi, Liverpudlian\u2019 Dr. Chila Kumari Burman whose joyous work has been adorning the Tate Britain since Diwali; Japanese born, Brooklyn based artist Yui Kugimiya whose work is unique in its use of traditional painting techniques to create quirky stop-motion animations and Antonia Showering whose lockdown year included a White Cube show and another with Timothy Taylor.<\/p>\n

\u201cThe I AM publication has had a tremendous response from the women that the Trust supports and the artists have been very keen to create their responses. About The Hepatitis C Trust<\/p>\n

The Hepatitis C Trust is the national charity for people with hepatitis C. It is a patient-led and patient-run organisation; most of its board, staff and volunteers have had hepatitis C themselves.
