If you\u2019d like to sample Billington\u2019s Maple Syrup, select press samples are available.<\/p>\n<h3>BILLINGTON\u2019S VEGAN PANCAKES BY JULIET SEAR<\/h3>\n<p><img decoding=\"async\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2020\/02\/pp2.jpg\" \/><\/p>\n<p>Ingredients:<\/p>\n<p>\u2022 140g Self Raising Flour (We like Allinson)<br \/>\n\u2022 2 tbsp Unrefined Golden Caster Sugar (We use Billington&#8217;s)<br \/>\n\u2022 10g Baking Powder<br \/>\n\u2022 1 tsp Salt<br \/>\n\u2022 240ml Soymilk<br \/>\n\u2022 1 tbsp Apple Cider Vinegar<br \/>\n\u2022 1 tsp Vanilla Extract (We like Nielsen Massey)<\/p>\n<p>Method:<br \/>\n1. Place add all dry ingredients in a large bowl, whisk through to combine and aeriate.<br \/>\n2. Add wet ingredients to the dry mixture and whisk together, taking care not to over mix<br \/>\n3. Let batter sit for a couple minutes while your pan\/griddle heats to medium-low<br \/>\n4. When your cooking surface is heated, lightly grease it (I use a little vegan butter)<br \/>\n5. Pour about 1\/8 of batter into the pan (use a mug or ladle)<br \/>\n6. When the top begins to bubble, flip the pancake and cook until golden and puffy<br \/>\n7. Tip into a bowl and stir in the baking powder and pepper.<br \/>\nIn a measuring jug, whisk together the milk and 1 egg, then stir the wet mixture into the dry, until thoroughly combined. Do not let the batter rest, as it may thicken too much. If this occurs, add more milk.<br \/>\nPour \u00bd a teaspoon of oil onto a non-stick frying pan and spread around the pan.<br \/>\nHeat a frying pan over a medium heat then add about two teaspoons of the batter. Cook for approx. 2 minutes or until a few bubbles have appeared and the pancake has risen slightly, then use a spatula to flip the pancake, cooking for a further 2 minutes.<br \/>\nServe with a fried egg, chopped cooked beetroot, sliced avocado, fresh parsley, feta and extra virgin olive oil (or any savoury toppings you desire!).<\/p>\n<h3>Day After Porridge Pancakes with Grilled Honey and Orange Figs<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-619576\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2020\/02\/ff2.jpg\" alt=\"\" width=\"615\" height=\"494\" \/><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>50g Flahavan\u2019s Organic Porridge Oats<br \/>\n250 ml milk<br \/>\nOR 275g leftover porridge and a splash of milk<br \/>\n1 egg<br \/>\n50g plain flour<br \/>\n1 tsp baking powder<br \/>\n4 black figs<br \/>\nKnob of butter<br \/>\nJuice and zest of half an orange<br \/>\n1 tbsp honey<br \/>\nGreek yoghurt<\/p>\n<p><strong>Method<\/strong>:<\/p>\n<p>Place the Flahavan\u2019s Organic Porridge Oats in a small pan over a medium heat with 250ml milk and bring to the boil and reduce the temperature to a low heat and continue cooking for around 10-12 minutes until thick and creamy. Leave the porridge overnight covered with some clingfilm.<\/p>\n<p>Whisk the overnight porridge together with a splash of milk and the egg until well combined. Alternatively, you can add the splash of milk and egg to any leftover porridge you may have.<\/p>\n<p>Sift in the flour and baking powder to the porridge and whisk to combine.<\/p>\n<p>Halve the figs and place cut side facing up on a baking tray. Drizzle with the honey and the orange zest and juice. Place under a hot grill and cook for 5-6 minutes or until the figs start to release their juices and collapse.<\/p>\n<p>Melt a knob of butter in a non-stick frying pan and cook spoonfuls of the batter in batches until golden brown on each side. Repeat until all the batter is used up.<\/p>\n<p>Serve the pancakes with the grilled figs and Greek yogurt.<\/p>\n<p><strong>For Pancake Day are you going for a classic crep\u00ea or an American style pancake?
