Preheat your oven to 220\u00b0C\/425\u00b0F\/Gas Mark 7. Slash the skin of the duck breasts then season generously and place \u2013 skin side down &#8211; in a hot dry frying pan over a high heat. Cook for 2 minutes then turn and cook for 2 minutes again.<br \/>\n2. Meanwhile, in a small roasting tin mix the marmalade with the soy sauce and sesame seeds. Add the part cooked duck and coat well.<br \/>\n3. Roast in the preheated oven for 10 minutes, then rest for 10 minutes before slicing.<br \/>\n4. Drizzle the juices from the roasting tin over the meat and serve with potatoes and seasonal vegetables.<\/p>\n<p style=\"text-align: center;\">Avocado, Prawn and Cabbage Salad<br \/>\n(Serves 6)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-557853 aligncenter\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2019\/02\/om2.jpg\" alt=\"\" width=\"206\" height=\"269\" \/><\/p>\n<p style=\"text-align: center;\">Ingredients:<\/p>\n<p style=\"text-align: center;\">6 fat garlic cloves, thinly sliced<br \/>\n2 tbsp vegetable oil<br \/>\n350g (12oz) raw shelled prawns<br \/>\n25g (1oz) roasted cashew nuts, finely chopped<br \/>\n1 ripe avocado<br \/>\n125g (4oz) white cabbage or Chinese cabbage, finely shredded<br \/>\n1 small green mango, peeled, stoned and shredded<br \/>\n1 small handful of fresh mint and coriander leaves, roughly chopped<br \/>\n6 spring onions, shredded<\/p>\n<p style=\"text-align: center;\">For the dressing:<\/p>\n<p style=\"text-align: center;\">\u00bd red chilli, deseeded and finely chopped<br \/>\n1 tbsp rice wine vinegar<br \/>\n2 generous tbsp. Bonne Maman Apricot Conserve<br \/>\nJuice of 2 limes<br \/>\n1 tbsp fish sauce<br \/>\n2 tbsp vegetable oil<\/p>\n<p style=\"text-align: center;\">Method:<\/p>\n<p style=\"text-align: center;\">Put all the dressing ingredients in a jar and shake together.<\/p>\n<p style=\"text-align: center;\">Fry the garlic in the oil in a heavy-based saucepan over a medium heat until golden and crispy. Remove from the oil with a slotted spoon and set aside.<\/p>\n<p style=\"text-align: center;\">In the same oil, stir-fry the prawns with the roasted cashew nuts for about 2-3 minutes until the prawns are just pink. Add to the garlic, spoon over 2 tablespoons of the dressing and set aside to cool.<\/p>\n<p style=\"text-align: center;\">When ready to serve, peel, stone and dice the avocado and toss together with the cabbage, mango, herbs, spring onions and prawn mixture. Serve immediately, handing round the remaining dressing in a separate bowl.<\/p>\n<p style=\"text-align: center;\">Cooks Tips<br \/>\n&#8211; Make the dressing up to 1 week ahead and keep in a jar in the fridge. Cook the prawn mixture the day before needed. Nothing beats a roast chicken, but this take on it delivers something a bit special that can either be served with all the traditional roast trimmings or equally well with plain rice and stir-fried vegetables.\u201d \u2013 Gizzi Erskine<\/p>\n<p style=\"text-align: center;\">Serves 4<br \/>\nPrep time: 10 minutes<br \/>\nMarinating time: 1-24 hours<br \/>\nCooking time: 1 hour 10 minutes<\/p>\n<p style=\"text-align: center;\">1 whole chicken 1.5-2kg<br \/>\nFor the marinade:<br \/>\n3 tbsp Lee Kum Kee light soy sauce<br \/>\n1 tbsp Lee Kum Kee dark soy sauce<br \/>\n3 tbsp golden caster sugar<br \/>\n1 tbsp sesame oil<br \/>\n60ml rice vinegar<br \/>\n3 tbsp Lee Kum Kee Premium Oyster sauce<br \/>\n1.2 tsp Chinese 5 spice<br \/>\n1 tsp ground white pepper<br \/>\n1 tsp freshly ground black pepper<br \/>\n5 cm piece fresh ginger, peeled and sliced<br \/>\n1 red chilli, halved<br \/>\n6 spring onions<br \/>\n1 tbsp groundnut oil<br \/>\nDecent pinch of sea salt<br \/>\nMix together all of the marinade ingredients together in a small bowl. Place the chicken on a roasting tray. Pour the marinade all over the chicken, massaging it into the skin, and stuffing the ginger pieces and chilli into the cavity of the chicken. Allow to marinate for at least 1 hour, but preferably overnight.<br \/>\nOnce the marinating time is up, preheat the oven to 190C \/ 160C fan oven \/ Gas mark 5. Now this next bit is a little fiddly, but trust me it\u2019s worth it. With a needle and thread, carefully sew up the skin around the base cavity of the chicken, (blanket stitch is ideal for this), so that it is as tightly sealed as possible. Pour off the marinade into a jug.<br \/>\nGive the roasting tray and wash, and then lay the spring onions in a line to act as a trivet for the chicken. Next, pour the marinade back into the cavity of the chicken through the neck cavity. Gently place on top of the spring onions being careful not to lose any juices. Finally, sew the skin of the neck cavity up to contain all of the marinade within the chicken.<br \/>\nDrizzle the groundnut oil over the chicken, and season liberally with salt. Put in the oven for 1 hour 10 minutes, depending on the size of the bird.<br \/>\nAllow the chicken to rest for 20 minutes before serving. To serve; cut through the part of the chicken that\u2019s been sewn together and Pour out the juices. Simmer for 15 mins<br \/>\nFinely chop the peanuts \u2013 add half to the pan and stir through<br \/>\nCook the noodles as per the instructions on the pack<br \/>\nChop the coriander and add to the pan<br \/>\nFinely chop the cucumber<br \/>\nServe the mince on the noodles \u2013 topped with the remaining peanuts and the chopped cucumber<\/p>\n<p style=\"text-align: center;\">Serving tip: this dish is also great served without the noodles in crisp iceberg lettuce leaves<\/p>\n<p style=\"text-align: center;\">Prep time \u2013 10 mins<br \/>\nCook time \u2013 20 mins<\/p>\n<p style=\"text-align: center;\">Sweet and Sour Pork Fillet<br \/>\nServes 4<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-557868 aligncenter\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2019\/02\/Sweet-and-Sour-2.jpg\" alt=\"\" width=\"615\" height=\"923\" \/><\/p>\n<p style=\"text-align: center;\">Ingredients:<br \/>\n600g pork fillet<br \/>\nFor the sauce<br \/>\n1 x large red pepper<br \/>\n4 x spring onions<br \/>\n3 x cloves garlic<br \/>\n300g fresh pineapple<br \/>\n35ml white wine vinegar<br \/>\n35g tomato ketchup<br \/>\n35ml light soy sauce<br \/>\n35ml lemon juice<br \/>\n35ml rapeseed oil<br \/>\n15g piece fresh peeled ginger<br \/>\nFor the pork<br \/>\n15ml lemon juice<br \/>\n15ml light soy sauce<br \/>\n20g cornflour<br \/>\nExtra rapeseed oil to fry<br \/>\nFresh chopped coriander to sprinkle<\/p>\n<p style=\"text-align: center;\">Method:<br \/>\nFor the sauce<br \/>\nChop the red pepper into thin strips, discarding any white pith and seeds<br \/>\nWipe, trim and cut the spring onions into thin strips<br \/>\nPeel and finely chop the garlic<br \/>\nFinely chop the ginger<br \/>\nChop the pineapple into small pieces<br \/>\nIn a wok heat the oil and add the peppers, spring onion, garlic and ginger and fry for 2 minutes<br \/>\nAdd all the rest of the ingredients for the sauce and bring to the boil \u2013 put this to the side while you cook the pork<\/p>\n<p style=\"text-align: center;\">For the Pork:<br \/>\nCut the fillet in half lengthways \u2013 then cut the pork into thin strips<br \/>\nPlace the pork in to a bowl along with the extra soy sauce and lemon. Stir to coat the pork.<br \/>\nAdd the cornflour the pork bowl and mix well<br \/>\nHeat some oil in a large frying pan and saut\u00e9 the pork on a high heat for 4 minutes (You may have to do this in batches if your pan isn\u2019t big enough.
